Paragraphs is the closest to editorial text. Blocks separated by a blank line become paragraph elements, and single breaks within a block become line breaks. This is what you want for an article, an email or a product description.
Breaks turns every newline into a visual break without creating paragraphs. It suits text that is a list of short lines — an address, a signature, a poem.
Preformatted wraps everything in a block that preserves spacing and alignment exactly as typed. It is the mode for terminal output, code, or a table built with spaces.
With escaping on, characters that carry structural meaning in HTML become entities: less-than becomes <, greater-than becomes >, ampersand becomes & and quotes become their entities.
Without escaping, any markup present in the text is interpreted by the browser. If the text came from someone else, that is an open door to code injection.
The rule of thumb: if you wrote the text, turning escaping off lets you keep intentional markup. If the text came from a form, a comment or any source you do not control, leave it on.
URL conversion recognises addresses starting with http or https and turns them into anchors.
Generated links carry the noopener and nofollow attributes. The first stops the destination page from gaining a reference to your window, a protection against tampering. The second tells search engines you do not endorse the destination — the correct behaviour for a link inserted automatically from third-party text.
Addresses without a protocol, written as a bare domain, are not recognised. That is deliberate: guessing would turn any word with a dot in it into a link.
